Tasting Notes
Anyone who has followed the brewery long enough knows that we love to scale up and scale down our hop pairings across various styles. From those halcyon Loka Polly days to the present day, we’ve been scaling up our pairing of Mosaic and Simcoe from that original kick-ass pale, to a double dry-hopped IPA with some serious sass, all the way up to a complete behemoth of a double IPA. We’re back in Pale country this time around with Goldroom – a sensible pint smasher, with all the typical Polly’s checkmarks, helped in no small part by probably the brewery’s favourite pairing. If the Originals range Mosaic Simcoe Pale was Lilt for grown ups, then this is Rubicon for the cool edgy kids who smoke behind the bike shed. Straight up juicy naughtiness that drinks way lower than its ABV suggests.
