When done right, there is little better than a well-conditioned pint of cask beer. But when handled wrong, cask ale can be an unforgiving mistress. Theoretically, this is because you become ‘the brewer’ when cask ale is delivered; it is not ready to serve straight away. It needs to be taken through what is called ‘secondary fermentation or conditioning’ in the cellar, so you must be prepared to work a little bit harder to get this beer in perfect condition.
