Clairin is a Caribbean spirit that undergoes a fermentation process similar to that of rum. It is also obtained from the processing of sugar cane, but on the basis of sugar cane juice and not molasses. The cultivation of sugar cane for a real clairin is done in a traditional way, partly using 18th century methods. The Douglas Casimir Distillery presents its white clairin (premium rum) from Haiti in a colorful 0.7-liter bottle, made from Hawaiian sugar cane grown on the Caribbean coast. Clairin's production is reminiscent of American Moonshine.
